Someone asked on FB for great Vegan Chili recipe.  I had this one that I loved.  I call it vegetarian, but there is no dairy or egg or meat or fish or butter or cream or whatever.  And it is still great.


Recipe Details: 2 onions

2 green peppers

1 red pepper

4 cloves garlic

1 28 oz. can peeled tomatoes

1 15 oz. can vegetarian baked beans

1 15 oz. can chickpeas

1 15 oz. can corn

1 TBS. cumin

1 TBS. basil

1 TBS. oregano

2 TBS. chili powder


Saute onions, garlic, and peppers in olive oil. Add tomatoes and spices, and salt to taste. Cook, uncovered, for 30 minutes. Add beans, chickpeas, and corn. Cover and cook for 20 more minutes. Makes about 4-6 servings.
