About the Recipe:   I make meringue cookies with chocolate chips every Passover and they are a huge hit with my family–especially my nieces.  I add in plenty more chips than the recipe below calls for to make them extra special.  This is my Valentine’s Day version with an extra crisp, given to me by my son’s girlfriend, who thought it was a family secret until she saw Martha Stewart makes these too!  You have to let these sit for many hours in the oven so best to make overnight.  Do not open the oven door!

Recipe Details:

2 egg whites

2/3 cups granulated white sugar

Pinch of cream of tartar

1 1/2 cups Rice Krispies

1 large package of chocolate chips (or more)

 

Preheat oven to 400 degrees

Beat egg whites to peaks, gradually adding sugar until it’s fluffy

Fold in rice krispies and chocolate chips

Drop by teaspoons onto greased cookie sheet and place in oven.  Immediately shut off oven and leave cookies in overnight (or for 5-6 hours until the oven has completely cooled)
