When we heard about these cookies from Linda Wolff, the Carpool Goddess: simple to make, “relatively” healthy, and delicious–we knew we had to try them. They’re even flourless! They’re like a little batch of Trail Mix wrapped in a cookie–how could you go wrong? In keeping with the Foodie Corner’s Apple theme, we substituted dried apple bits for the raisins in the original recipe, and we think they make the cookies even tastier–if that was even possible!

 

 

 

Oatmeal-Apple-Chocolate Chip Cookies

3/4c. rolled oats

1/4tsp. baking soda

1/8 tsp. salt

2 Tbsp. brown sugar

1/2 tsp. granulated sugar

3-4 Tbsp. chopped dried apples

1/4c. dark chocolate chips

1 Tbsp. vegetable oil

2 Tbsp. milk

Line a baking sheet with parchment paper and set aside. Preheat oven to 375 degrees. Blend oats, baking soda, salt, and sugars together in the bowl of an electric mixer. Add remaining ingredients and mix until all are incorporated and mixture is moist. Using a small ice cream scoop or moistened hands, form small cookies and place them on the prepared cookie sheet. Bake for 7 minutes, until edges are crisp. Allow cookies to cool completely on the baking sheet (very important) or else they will fall apart.
