The incidence  (and understanding of) celiac disease seems so much more prevalent these days than it was when we were younger. And while it is markedly less stressful to find food products that are gluten-free and allow people to live a gluten-free life, those with the disease must still be vigilant–as “one wrong bite can mean a week of feeling lousy.”
