This simple recipe for delicious Knappkuchen comes from Kim Demshki. While Kim calls the dessert “German Christmas Cookies,” it really is a classic, buttery pound cake, and it is a staple at her Christmas get-togethers.
1 cup butter, at room temperature
2 cups sugar
4 cups all-purpose flour
1 level tsp. baking soda
1 tsp. freshly grated nutmeg
cinnamon/sugar for sprinkling
Preheat oven to 350 degrees.
Cream butter and sugar together until light and fluffy. Add eggs and mix until combined. Sift dry ingredients together and add to egg mixture. Scrape batter into a greased 9×12-inch pan, and smooth out top. Sprinkle cinnamon sugar evenly over the top of the cake.
Bake for 22-25 min. Let cool and cut into squares.
