This simple recipe, submitted by Leah Rubin, is an example how cake mixes can be “doctored up” to make wonderful desserts besides just cake. These “yummy” (and rich) applesauce squares are a favorite of the Rubin family. They contain no eggs, so if you’re like Leah’s daughter, and have an egg allergy, you’re home free with this one!
Applesauce “Yummies”
1 box yellow cake mix
4 oz. (1 stick) unsalted butter, softened
1 Tbsp. cinnamon
2 cups applesauce
1 12 oz. package butterscotch chips
½ cup sliced almonds
½ cup wheat germ
Mix the first three ingredients together until crumbly. Reserve one cup for the topping.
Press the remaining mixture into a greased 9×13 pan. Bake this at 350 degrees for 20 minutes, till light brown.
Remove from oven, and spread the applesauce over the top. Sprinkle the butterscotch chips on top of the applesauce.
Combine the nuts, wheat germ and remaining cup of reserved crumb mixture, and distribute evenly across the pan. Bake at 350 degrees for another 25 minutes, till golden brown. Let cool completely, and cut into squares.
