Do you love pizza, but stay away because of the carbs in the crust…and the cheese…and the pepperoni? (And pizza is not exactly made for the picnic basket either.) This terrific salad may be the answer to your prayers–it has the taste of pizza, but you can go as heavy or as light as you like on the pizza toppings, and there’s no crust! (Unless you’d like to add a slice from a crusty loaf of bread to your individual salad bowl.) You might just call it pizza in a bowl! Caryn Payzant, The Midlife Guru, contributed this recipe. She suggests you not add all the dressing at once–taste before you empty the entire jar.

 

 

 

Pizza Salad

Salad:

1 head Romaine lettuce, torn into small pieces

1 medium tomato, diced

½ cup sliced olives

1 medium green pepper, cut into thin strips

1 medium red pepper, cut into strips

¼ teaspoon oregano

8 ounces turkey pepperoni, diced

2 cups grated Sargento Mozzarella Cheese

Dressing:

¼ cup apple cider vinegar

½ cup tomato sauce

1 envelope cheese garlic salad dressing mix

3/8 teaspoon Stevia

¼ cup olive oil

Toss all salad ingredients together in a large salad bowl.

Pour vinegar into a cruet or jar with a tight-fitting lid. Add tomato sauce, salad dressing mix, and Stevia. Shake well. Add olive oil and shake again. Just before serving, pour dressing over the top (Caryn says she does not add all the dressing at once, so taste it before you do)  and toss lightly to blend ingredients. Makes 7-8 servings.
