Popover Pork Chops

What could be more homey than pork chops, apples and popovers? And what could be more easy than all of that deliciousness in the same pan? Risa Nye has submitted this very unique recipe that will make a wonderful dinner for a fall afternoon.

 

 

 

Popover Pork Chops

1 large Golden Delicious apple

3 to 4 Tbsp. vegetable oil

4 pork loin chops, about 1 ½ inches thick (don’t use thin ones; they’ll become tough and dry in baking)

1 c. milk

3 eggs

1 c. flour

2 Tbsp. melted butter

½ tsp. salt

Warm applesauce

Preheat the oven to 425.

Peel and core the apple, then slice it into 4 thick rings.

Heat 3 tablespoons of the oil in an oven-proofskillet over moderately high heat and quickly brown the apple rings in it for about 1 minute on each side. Remove the apples, and in the same fat (add a tablespoon or more, if necessary), brown the chops for about 1 minute on each side. Place an apple ring on top of each chop and remove from heat.

In a large mixing bowl, whisk together the milk, eggs, flour, butter and salt until perfectly smooth. Pour the batter into the pan with the chops, and bake for about 25 minutes, or until golden brown and puffy. Serve immediately with warm applesauce.

Serves 4.

    Popovers, pork chops and apples are three of my favorites. This recipe sounds so amazing I am going to defrost some pork chops in my freezer right after I send this email. Is this a family favorite?
